Tomato rice is hot, spicy and tangy in flavour.It has its origin from South India.
Ingredients:
2 cups cooked Basmati rice.
4 large ripe tomatoes cut into cubes
2 tbsps vegetable oil
1 tsp mustard seeds
2 tsp urad dal without chilta.
1 large onion chopped finely
2 green chillies slit lengthwise
1/2 tsp chilly powder
1" piece of ginger finely grated
Coriander leaves finely chopped
Salt to taste
Preparation:
1.Heat the oil in a deep pan
2.Add the mustard seeds and green chillies.
3.When they stop spluttering add urad dal and fry till it is golden brown.
4.Add the onion and fry till they become translucent.
5.Add the tomato and ginger and mix well. Cook till the tomatoes turn pulpy.
6.Add cooked rice.
7.Add salt and chilly powder.Mix well.
8.Cook on a low flame for 3-4 minutes, stirring frequently.
9.Serve hot and enjoy!!!
