Egg curry is the most easy and delicious dish that does not require any other side vegetable.It goes well with Plain Parathas.
Ingredients:
4 Boiled Eggs.
2 Finely chopped onions.
3 Tomatoes finely chopped.
1 Green chillies finely chopped.
1/2 tsp chilly powder.
1/2 tsp cumin powder.
1/2 tsp cumin seeds.
Salt to taste.
Cilantro finely chopped.
3 tsp oil.
1 cup water
Procedure:
1.Heat 2 tsp oil in pan.
2.Fry chopped onions in it till they are golden brown.
3.Now put green chillies and tomatoes in it and fry untill the tomatoes become soft.
4.Now put cumin powder in it and mix and fry for 1 min.
5.Now grind this mixture.
6.Heat 1 tsp oil in pan and put cumin seeds in it and fry until they splutter.
7.Now put the grinded mixture in his oil.
8.Put water in this mixture and let the mixture cook for 15 min on medium flame.
9.Now add boiled eggs,salt and chilly powder in this gravy and cook it for another 5 min.
10.Garnish it with chopped coriander and serve hot with Parathas.
