Ghujia


Holi is on 11-March ,so thought to prepare some delicacy for this occassion.If its festival of Holi then Ghujia is the first thing that comes into our minds,so decided to prepare Ghujia this festive season.Preparing Ghujias takes little bit of time and efforts but once prepared successfully brings a feeling of joy in your as well as your loved ones face.Below recipe will make around 8 ghujias.


Ingredients:
4 cups of All purpose flour
16 oz Ricotta cheese(500 gm khoya)
10-12 resins
100 grams of Almonds
4 tablespoon of cooking oil
1/2 cup sugar
For sticking the rolled chapattis -
1 tsp all purpose flour
2 tsp water

Procedure:
1.Mix the 1 tablespoon oil and flour properly to form a binding consistency of breadcrumbs.
2. Add some water and knead lightly the entire mixture.
3.Make it soft dough and keep it aside with a damp cloth covering it.
4. Heat 1/2 tbspn oil in pan and fry khoya/ricotta cheese till it becomes light brown(or a dry in case of ricotta cheese).This will take around 7 min.Keep stirring so that khoya doesn't get burnt.
5.Now add sugar in this mixture and mix well.
6. Add the almonds and raisins, and fry for a 2 more minutes.
7.Remove from fire and let it cool and keep this mixture aside.
8.For making mixture that will help in sticking the edges of ghujia dissolve 1 tsp all purpose flour in 2 tsp water and form a smooth paste
9.Now kneed the flour for 2 min,and divide it into 10 equal parts.
10.Roll each part into 4 inch diameter circles.
11.Dip a finger in sticking mixture( that you prepared in step 8) and apply it on edges of these circles.
12. Fill half of the chapatti with the khoya mixture and seal the sides of the chapatti keeping the khoya inside it.
13.Make the sealing look decorated by giving a look of hemming.
14.Deep-fry these gujias until it becomes light golden brown, keeping the flame at low.
15. Drain oil from these ghujias.
16.Enjoy it in this festive season.
