Kheer is one of my favourite dessert, which is very nutritious and easy to prepare.It is known by different names in different regions like Kheer in Punjab,Rice Pudding in Bengal and Payasam in South India.The below recipe will make 6 servings.
Ingredients:
2 litres milk.

4 tablespoons sugar.
2-3 tablespoons rice(washed well and dried on plate)
a few raisins.
a few almonds blanched and finely sliced
few strings of saffron
Procedure:
1.Heat milk in a large pan.

2.Add saffron strings with boiling milk, so that it gives its colour and flavour.
3.Simmer until reduced to three-quarters of its original volume.
4.Add washed rice.
5.Add sugar when rice is tender and continue cooking until milk is reduced to half its original volume.
6.Add raisins and finely sliced almonds.
7.Cool and serve.
