Lemon Rice


Lemon Rice is a delicious South Indian dish which can be prepared as breakfast or lunch or even as evening snack.Although its origin is from South India but still it is popular and enjoyed in all parts of India.This goes great with mango pickle and yogurt.This can be even prepared with left over rice

Ingredients:
2 cups cooked Basmati rice
1 tsp mustard seeds
3-4 curry leaves
2 green chillies slit lengthwise
1/2 cup peanuts (roasted and unsalted)
1 tsp turmeric powder
2 lemons juice.
Salt to taste
2 tsp oil.

Preparation:
1.Heat the oil in a pan and add the mustard seeds and wait till they splutter.
2.Add curry leaves and green chillies. Fry till the spluttering stops and then add peanuts. Fry for another minute.
3.Add the turmeric powder and turn the heat to simmer(low).
4.Add the lemon juice and mix well.
5. Add rice and salt in this and mix well.
6.Cook for 2 min.
7.Lemon rice is ready to be served.
