Gulab Jamun


This is a traditional Indian dessert. Spongy milky balls soaked in rose scented syrup.It is very popular recipe in India and prepared in various occasion.Its a very easy recipe.This recipe will make 10 Gulab jamun.

Ingredients:
For balls:
1 cup dry milk powder
1/4 cup tablespoons all-purpose flour
2 1/2 tablespoons ghee (clarified unsalted butter), melted
1/4 cup warm milk
pinch of baking soda.
2 cups oil for frying
For syrup:
1 1/4 cup of sugar
1 cup water
4 cardomom seeds
few strands of saffron
Procedure:
1.In a large bowl, stir together the milk powder, flour, baking soda. Mix in the melted ghee, then pour in the milk, and continue to mix until well blended. Cover and let rest for 20 minutes.
2.In a large skillet, stir together the sugar, water and cardamom seeds. Bring to a boil, and simmer for just a minute. Set aside.
3.Heat oil in a skillet. Heat over medium heat for at least 5 minutes.
4. Knead the dough, and form into about 10 small balls.
5.Reduce the heat of the oil to low, and fry the balls in one or two batches.
6.After about 5 minutes, they will start to float, and expand to twice their original size, but the color will not change much. After the jamun float, increase the heat to medium, and turn them frequently until light golden.
7.Remove the balls from oil and drain extra oil by placing them over paper towels.
8.Let the balls cool for 3-4 min.
9.Place the balls into the skillet with the syrup.
10. Serve immediately, or chill.
