This indian dessert although very quick and easy to prepare but is reallytasty to have.If you have less time and want to eat something sweet thisis the best choice.
Ingredients:
1 cup fine sooji/rava.
1 cup sugar.
8 cashews each cut into 4 parts
Few strands saffron(optional).
1 tea spn raisins.
1/2 tea spn cardamom powder.
3/4 cup water.
Ghee.
Method of preparation:
1.Heat ghee and add raisins and cashews. The raisins will slightly puff up and the cashews will become very light golden brown in hot ghee.
2.Add sooji in it and fry for about 5 mins on medium heat mixing continuously till a nice aroma comes out of it and it is golden brown in colour.
3.Take out the sooji in a plate.
4.In the same pan, add water, sugar and heat. Add the saffron strands. Boil it for about 5mins.
5.Switch off the heat and add sooji and mix well. Add cardamom powder and mix well.
6.At this stage, the mixture becomes too watery which is perfectly fine.Close the lid of the pan and let it sit for about 15-20mins.The mixture will get dry in this time period.
7.When it is dried and can be handled, apply some ghee to hands and make laddoos.
8.When they are cooled to room temperature, store in air tight containers. Finish them within 1 week.
