Aloo Paratha(Potato Paratha)


One of the easiest recipes that can be prepared for a breakfast or lunch or dinner is a stuffed paratha.Paratha stuffed with Aloo(Potato) is the easiest of all stuffed parathas.It can be enjoyed with yogurt and mango pickle.

Ingredients:
For stuffing:
3-4 potatoes.
1 tbs. cooking oil.
2-3 green chillies, finely chopped
1/2 tsp. Garam Masala
1/2 tsp. Dhaniya powder.
1/2 tsp. Amchoor or dry mango powder.
Coriander leaves finely choppedSalt to taste

For dough:
2 cups wheat flour.
1/4th cup wheat flour for dusting
1 tbs. ghee / butter / oil.
Salt to taste.
Enough water to make dough.
2-3 tsp ghee or butter for frying paratha’s

Procedure:
1.Boil potatoes, cool, peel and mash the potatoes.
2.Add all the ingredients for stuffing and mix well.
3.The mix should be dry, free of water otherwise, it will be difficult to roll parathas.
4.Keep the this mixture aside.
5.Sieve flour.
6.Add salt, oil or ghee,and add water a little at a time.Knead into medium soft dough
7.Knead well for 5-6 minutes.Cover with a wet cloth and let the dough sit for 20-30 minutes.
8.Knead the dough again
9.Divide the dough and stuffing into balls of equal portions.
10.Now roll one ball at a time in the form of a small puri.
11.Now put a small quantity of above potato mixture over it, close it from all sides.
12.Apply some flour on both sides and roll it gently into a paratha.
13.Now cook it on a tava, allow one side to cook when the color changes into light brown color.
14.Turn repeat for other side.
15.Apply some butter or ghee on each side and flip.
16.Serve hot with pickle and yogurt.
