Puri

Puri is one of most famous indian bread.It is made with wheat flour.It goes well with choley,aloo tamatar rasa(my speacilality) etc.It can be simply enjoyed with mango pickle.

Ingredients:
2 1/2 cups Chappati flour
2/3 cup Water at room temperature.
Oil for deep frying

Procedure:
1.Put flour in a large bowl.
2.Make a small well in the middle and pour water in the center. Use one hand to mix the flour and water in a rotating motion from the center of the bowl outward, until the dough is moist enough to be gathered into a mass.
3.Wet hands and continue until the mixture cleans the sides of the bowl and has become a nonsticky, kneadable dough. When the dough is kneaded, it is smooth and elastic.
4.Rest the dough for 1/2 hr
5.Now knead the dough again for 2 min
6.Now the dough will be stiff enough to roll without extra flour.
7.Make small balls of the dough
8.Take one ball of dough and roll it out into 4 to 5 inches round.
9.Repeat the same process to roll out all pooris.
10.Heat plenty of oil in a kadhai until it is very hot.
11.Put in a poori and immediately start flickering hot oil over the top of it with a spatula so that it will swell up like a balloon. This should take only a few seconds.
12.Flip the poori over and cook the other side until golden brown.
13.Serve the puri hot with choley or other vegetables.
